10 months of watching students learn from ground zero- or nearly, and walk the farm to fork path.
It’s been 10 months of tasting, testing, and tasting again as eager amateurs become knowledgeable, accomplished, and sure of themselves.
This Ham ‘n Stand was 10 months in the making. As the proof of the pudding is in the eating, I tasted a slice off Struan Robertson’s Marmalade Ham today after 10 months of studying Butchery & Charcuterie. A match made in heaven- sweet orange marmalade and a well-salted ham displayed in a vintage English Ham Stand. The proof of this ‘pudding’ is backed by 10 months of understanding where the meat comes from and how to treat it with delicious respect. Chapeau!
