Foie Gras, Truffles & Terrine
Think of this as VSOP of Culinary experiences (Very Special Opportunity!). Where else do such luxury items and get honest food come together? February is a celebration of all things truffle as we start at the world famous seasonal market at Lalbenque in the Lot. This is the perfect place to learn your Tuber Melanosporum from the masquerading brumale while witnessing the folkloric gathering of fungi dealers from all over the world. Gathering a basket full of fragrant black gold, we return to the famous foie gras markets of Gascony where duck and goose rule the luxury barnyard. A generous splash of Armagnac livens the week as explore vineyard and cellars across the vast Gascon countryside returning to Nerac- the center of trufficulture of the Lot-et-Garonne.With a pantry full of gastronomic delights, each day we turn to the kitchen at Camont to recreate the best known dishes of the region- foie gras aux truffes, foie gras au torchon, and a truffle studded pate en croute.
